Lemon Chess Pie Recipe- Best Lemon Chess Pie

Why buy lemon pie when homemade is so much better? You can make lemon pie at home and enjoy the fresh aroma swirling through your kitchen. I'm not sure why they call this lemon chess pie (maybe years ago it was a favorite of chess players?) but I do know that you don't have to know how to play chess to enjoy this tangy favorite.

1 (15 oz.) package refrigerated pie crust
Filling
1/3 cup margarine or butter, softened
1 cup sugar
3 eggs
2 tablespoons flour
1/4 cup lemon juice
1 tablespoon grated lemon peel
1/2 cup milk
1/4 teaspoon nutmeg

Directions

Preheat oven to 450 degrees.
Make pie crust following the package directions for one 9-inch pie crust. You'll also need a 9-inch pie pan.
In a large bowl, combine the margarine, sugar and eggs; beat well. Add the flour, lemon juice, lemon peel and milk. Blend ingredients together thoroughly. (Filling may look curdled) Pour into a partially baked crust. Sprinkle with nutmeg.
Bake for 40 to 45 minutes, or until the edges of the filling start to get brown. The center of the filling should be almost set. After 15 to 20 minutes of baking, cover the edge of the crust with strips of aluminum foil to prevent the crust from burning.
Cool pie on a wire wrack for 30 minutes. Refrigerate 3 to 4 hours before serving. Garnish with whipped cream. Keep leftovers in the refrigerator.

- 1 tablespoon Gluten
- 2 teaspoons Molasses
- 1 1/2 teaspoons Fast-Rise yeast *** OR ***

- 1 1/2 cups + 2 tb Water
- 3 3/4 cups Wheat bread flour

- 3 teaspoons Active-Dry yeast

Directions:

The trick to making 100% whole wheat bread in your machine is an extra knead, which gives the yeast and gluten a second chance to create a lighter loaf.

When your first knead cycle is completed, simply reset the machine and start again. Some manufacturers produce home bakeries with a whole wheat cycle; If your machine doesn't have one, this start- again method works as an easy alternative.

Success Hints:

The gluten gives the whole wheat flour the structure necessary for a good loaf. If your market doesn't stock wheat gluten, try your local health food store. Remember the extra knead. It's especially important in 100% whole wheat bread. Because of the extra knead, use this recipe only on the regular bake cycle.

Homely Swedish Recipe - Potatismos & Korv

Homely Swedish Recipe - Potatismos or Creamed Potato

One of the classic Swedish dishes that is simple to cook, but utterly Swedish is Potatismos. The subtle but distinctive difference from the usual mashed potato is noticeable and delectable.

It is the classic accompaniment to "korv" or sausage and mustard. I first tasted it served to me whilst in Sweden, where it is widely available, much as fish and chips is in England.

You can easily create this dish at home even without the traditional korv. Simply take some bratwurst or hot dog sausages, slit them halfway and fill with a layer of Swedish mustard (sweet and not too hot).

Ingredients

- 12 medium-sized potatoes
- 1 decilitre of milk
- 2 tablespoons of margarine or butter
- Pinch of salt
- Pinch of white pepper
- Peel and cut the potatoes into small pieces.
- Boil the potato in salted water for 18-20 minutes.
- Drain & stand for a couple of minutes.
- Mash the potato with a potato masher. If you have a strong electric mixer you could also use this.

Method

- Put the butter in the milk and boil up until the milk simmers.
- Pour the milk into the potato mash, little by little, until you have the consistency you want.
- Continue beating until the mash is smooth and creamy.
- Add salt & pepper to taste
- Serve piping hot with korv or sausage and red cabbage.

Chocolate Cookie Recipes - Chocolate Sticks

I do not think you can have enough chocolate cookie recipes. Many chocolate cookie recipes go way back to our grandmothers cooked in large batches for all the grandchildren visit. This recipe is no exception, but is an old recipe that can be very easy to do with an electric mixer with the dough hook.

I usually start with the normal beater for creaming butter and sugar, and only when you start to get very stiff can I move the dough hook. This chocolate cookie recipe is best made the day before you want to cook and fully cooled in the refrigerator.

Ingredients for these chocolate sticks:

  • 6 tablespoons of butter
  • 3/4 cup of sugar
  • 1 egg
  • 1 tablespoon of milk
  • 1 teaspoon of vanilla or pinch of cinnamon
  • 5 teaspoons of cocoa
  • 1/8 teaspoonful of baking powder
  • 1 1/4 to 1 1/2 cups of sifted pastry flour

Method:

  1. Cream the butter until soft.
  2. Add the sugar gradually and beat well
  3. Add the beaten egg, milk and vanilla and mix thoroughly.
  4. Sift cocoa, baking powder, and a pinch of salt with about one-half cup of the flour. Stir this into the mixture first, then use the remainder of the flour, and more if necessary, to make a firm dough that will not stick to the fingers.
  5. Place in the fridge to harden.
  6. Preheat the oven to 350oF.
  7. Sprinkle the board with cocoa and a very small amount of sugar.
  8. Use small pieces of the dough at a time and roll out thin, cut in strips about one-half inch wide and three inches long.
  9. Place closely in pan and bake in the oven for three or four minutes. Great care should be taken in the baking to prevent burning. Watch them like a hawk!
  10. Gather the scraps after each rolling, if soft, and set away to harden, if you have to use too much cocoa to prevent them from sticking it will make them bitter.
  11. The colder and harder the dough is, the better it can be handled; therefore it is best made the day before using.

Enjoy!

- 60g finely chopped fresh parsley
- 1 medium onion finely chopped
- 25g finely chopped fresh mint
- 1 clove of garlic, crushed

- Salt and pepper
- Mint Salad
- 4 small ripe tomatoes
- 20g whole fresh mint leaves
- 1 small red onion finely sliced
- 1 tablespoon of olive oil
- 2 tablespoons of lemon juice

Method

Place the lamb, parsley, mint, onion, garlic and egg into a large bowl. Knead all the ingredients together while adding salt and pepper for seasoning. The use of the egg is to bind the ingredients together while adding extra protein and vitamins to the meal.

Shape the mixture into eight small patties and leave until you have made the mint salad. To make the Mint Salad first slice the tomatoes into thin rings. Place them in a bowl along with the sliced red onion, whole mint leaves, olive oil and lemon juice. Using a spatula or large spoon gently turn over the salad. Add salt and pepper for seasoning at the same time. Stop when the salad is evenly coated with the olive oil and lemon juice.

Once the salad is prepared brush on the patties a little olive oil both sides to stop them sticking to the hot barbeque grill. Place the patties on the barbeque and cook on each side for approximately 3-4 minutes. Make sure there is a nice brown crust on the bottom before you turn. Otherwise it may fall apart.
Put the wholemeal Pita breads on the barbeque only for a few seconds to brown both sides.

Using wholemeal Pitas gives the meal an extra higher fibre content than using ordinary white pitas. Once browned take off the pitas and cut in half. Open them up and place inside them a little salad. Add a lamb pattie and then a little more salad.
