When you think of the famous Mexican food, you might think of these culinary delights such as tacos, burritos, enchiladas and so on, but what about breakfast of Mexican food? Mexicans love to eat big meals and hearty breakfast is no exception.


 A good breakfast is important in all cultures and Mexicans like to start the day with a delicious recipe for Mexican food.

Typical Mexican hosts vary between the different regions of Mexico, but the tortillas are the determining factor of Mexican breakfast dishes.


Mexicans use to other nations use tortilla bread and you might find breakfast burritos or tacos Mexican menu. Unleavened tortillas are often made with corn flour, and have existed for thousands of years.


Huevos Rancheros is a typical Mexican breakfast and this is done by conducting an omelet with fried eggs and adding some hot sauce. Hot chocolate and coffee are also popular at breakfast in Mexico. A thick hot chocolate is a delicious Champurrado called infused cinnamon infusion, which is a hot drink and a cool morning.


Crispy rolls called bolillos often immersed in Mexican latte or hot chocolate. Sweet chocolate, nuts or fruit cakes can be served with coffee or hot chocolate. Many Mexicans have a sweet tooth.


Recipe for Corn Pancakes with cilantro and green onions


The following recipe is guaranteed to meet your family at breakfast time. These eggs contain corn tortillas, corn kernels, green onion and cilantro and are hearty and delicious. Sour cream and light tomato sauce are excellent accompaniments.


If you normally have your pancakes with maple syrup, why not try this delicious Mexican variant? This recipe makes enough to feed a family of four.



You will need:

  • 1 egg
  • 1 cup yogurt
  • 1/2 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/4 cup chopped fresh cilantro
  • 1/3 cup chopped scallions
  • 2 tablespoons vegetable oil
  • 1 teaspoon sugar
  • 1/2 teaspoon baking soda
  • 1 small jalapeno, seeded and chopped
  • 1/3 cup cornmeal
  • 1/4 teaspoon salt
  • 1 cup cooked corn kernels
  • Sour cream and mild tomato salsa, to serve

 

How to make it:

Sift the flour into a bowl, with the baking soda, baking powder, salt, and sugar. Stir in the cornmeal.
Beat the eggs, yogurt, corn, scallions, cilantro, jalapeno, and vegetable oil in another bowl, and then add this mixture to the flour mixture.


Heat a skillet over a medium high heat and brush it with oil. Ladle some of the batter into the hot skillet and cook it until there are little holes. Flip the Mexican pancake and brown the other side.
Repeat this until you have used all the batter. Serve the pancakes with sour cream and mild tomato salsa.
