Friendship Day Recipes

Friendship bands, cards, poems, quotes loads of fun and frolic- but then, how can Friendship Day be complete without its quota of gastronomical delights? In fact Friendship Day is the ideal occasion to share a pizza or a choco-shake with your buddies.

 No wonder the food jouints, pizza corners, coffee shops have a gala time on this day with friends forming such an overwhelming clientele.
This friendship day try to spice up the platter with some innovative recipes. In case you are at a loss of idea, here are a few to help you out -


Brandy-Buddy Cake


Ingredients

1½ cup brandy
1 lb peaches with juice
6 cups of sugar, divided (to 7 1/2 cups)
1 lb pineapple tidbits or chunks, with juice
1 lb fruit cocktail; can, with juice
10 oz Maraschino cherries
1 Box yellow cake mix
½ cup Oil
2 to 4 eggs
1 small pack instant pudding (vanilla flavor)
1½ c fruit; from starter
1 cup chopped nuts


Directions

Smoothly blend the brandy, peaches with juice and 2 to 2 ½ cups of sugar. Let the mixture stand for 10 days at room temperature in a loosely covered glass jar. Keep stirring everyday to avoid forming lumps. Put 2 to 2 ½ cups of sugar once more on the 11th day; also add the pineapple juice to it. Store and stir for 10 more days. On the 21st day add the rest of the sugar, the Maraschino cherries and the fruit cocktail. Continue the process for 10 more days. On the 31st day drain the juice and save it for starter. It can be refrigerated for 4 weeks.


Now for the Friendship Day cake, mix the cake mix, oil, eggs, pudding mix, and 1 ½ cups fruit from starter and nuts. Grease and flour the cake-pan and bake the cake for 30-40 minutes until it turns a delightful golden brown. Check it frequently, for your special Friendship Day cake may burn up. It already reads yummy, so why not go ahead and give your friends a brand new grand treat with the Brandy-Buddy Cake this Friendship Day on August 5th?


Choco Friendship Crackers


Ingredients

1 cup shortening
1/2 cup packed brown sugar
1/3 cup honey
2 cups whole wheat flour
1/2 tsp. baking powder
salt to taste
To make the chocolate glaze
1/2 cup semisweet chocolate chips
1 Tbsp shortening


Directions

Heat oven to 375 degrees. Beat 1 cup of shortening, the brown sugar and honey in a large bowl with an electric mixer on medium speed or mix with a spoon. Stir in flour, baking powder and salt (This is where I would add the cocoa for the chocolate cookies). Roll half of the dough at a time 1/8" thick on lighty floured cloth-covered surface. Cut into 2 1/2 inch rounds or squares. Place 1" apart on ungreased cookie sheet. Bake 7-9 minutes or until edges are firm. Cool 1-2 minutes; remove from cookie sheet to wire rack. Cool completely.
To glaze - melt the chocolate chips and shortening over low heat stirring occasionally. Drizzle over the cookies.


Baked Macaroni Pals


Ingredients

1 cup elbow macaroni (about 100 grams)
1-1/2 slightly heaped tablespoons butter, preferably unsalted
1 -1/2 tablespoons flour
1-3/4 cups milk
salt - to taste
pepper to taste
3 tablespoons grated cheese
1 capsicum
1 tomato


Directions

 In the larger pan, put 2-3/4 cups water, 3/4 teaspoon salt and a few drops oil. Boil the mixture before dropping the macaroni. Time 6 minutes. Then pour the macaroni into the strainer and hold it under cold, running water for a few seconds. Keep aside. Melt the butter and add it to the sieved flour mix it so that the flour loses its raw smell. Now add milk while stirring the flour mixture.

Take care so that lumps are not formed. Start heating again as soon as a smooth paste is made. Raise temperature to the boiling point. Stir from time to time till the sauce thickens. The whole process will take 3 minutes. Take the sauce off the fire. Stir in two tablespoons of the cheese. Now cut the stem off the capsicum. Scoop out the seeds and ribs with your hand.

Cut three slices off it so you get pretty circular shapes. Chop the rest of the capsicum into tiny bits. Also slice the tomato into rings. Mix the capsicum with the macaroni and pour it into the oven proof dish. Pour the sauce over.

 Mix well. Smoothen the top. Arrange the capsicum and tomato slices on top. Sprinkle over the reserved cheese. When you are ready to eat preheat the oven to 180 degrees. This will take 10-20 minutes. Put the macaroni in and bake 20 minutes or till the top is golden brown and the macaroni is bubbling hot.
