The ingredients you will need are:

  • 12 oz can black beans, drained
  • 12 oz jar chunky salsa (hot, medium or mild - your choice)
  • 12 oz can whole kernel corn, drained
  • 8 oz sour cream
  • 1 cup Velveeta cheese, cubed
  • 2 1/4 oz can sliced, pitted black olives, drained
  • 1 cup chopped tomatoes
  • 1 lb hamburger meat or ground turkey meat
  • Shredded cheddar cheese
  • Tortilla chips, to serve

This is how you make it:

Preheat the oven to 350 degrees F. Brown the meat in a skillet, drain it, and return it to the pan. Add the Velveeta cheese and melt it into the meat over a low heat. Add the corn and black beans and mix well.
Stir in the salsa and simmer the mixture on low until everything is warm.

Cover the bottom of a casserole dish with some chips and put half the burger mixture over it. Sprinkle some shredded cheddar over it. Top the cheese with half the sour cream, then sprinkle on half the olives and half the tomatoes.


Spread a layer of chips over the tomatoes and add the rest of the meat. Cover it with more shredded cheddar then cover the Mexican casserole recipe and bake it for half an hour. Remove it from the heat and use some more of the tortilla chips to line the sides of the casserole dish.


Add the rest of the sour cream, then the rest of the olives and tomatoes. Top with the last bit of the shredded cheddar. Serve this Mexican casserole with extra tortilla chips for dipping.
